BLOG: Avocado, tomato, lettuce cheeseburger with avocado dressing

Soooo… I am not on the meal plan and I am able to buy my own food and cook whatever I want, and it is a very nice perk!  I try to eat as healthy as I can for as cheap as possible, which can be very difficult at times because “healthy” food is super expensive.  I usually go to Sam’s Club to buy all of my bulk food since it lasts for so long.  To complicate things a bit further, I started “Insanity” this past week along with my regular workouts I do for track & field.  That means I am eating a lot more during the day; so, it is important to eat as healthy as possible.

 I went to the fridge after a workout and grabbed everything I could see at that moment.  I put the food on the counter and stared for a few minutes thinking, “What the heck fire am I going to concoct?!”  After thinking creatively, I plugged in the George Foreman and tossed a hamburger patty on the grill and closed the lid.  I grabbed two slices of whole grained bread and put them in the toaster.  While those were cooking I sliced two thick slices of the reddest tomato I had in the fridge.  Then, I picked up an avocado and cut it in half and pitted the center, sliced the avocado thinly, and set it aside.  I reached for some lettuce in the back of the fridge and chopped some layers off and set that aside also.  While the burger was finishing grilling I scooped out some mayo in a small bowl and took about a half of the avocado and dumped it in the bowl with the mayo.  I took a spoon and mushed it all together until it was relatively smooth.

After all of the prep work was finished it was time to make a masterpiece!  I put the hamburger patty on a slice of toast, followed by a slice of cheese.  On top of the cheese I placed the tomato, then the avocado slices came after.  I grabbed the lettuce and plopped it on top of it all. Lastly, I spread a thick layer of avocado mayo dressing on the other piece of toast and put the lid on it!  I cut that sucker in half, grabbed a drink from the fridge, and enjoyed my masterpiece!  What a great “I have no idea what to make, last minute, and fast meal” I was able to enjoy!  It sounds like an ordinary sandwich, but the avocado mayo is what made the entire experience!  Don’t leave that out folks, you’ll be sorry if you do!!!
